Makes 1 Cake

You will need:

  • 583g Betty Crocker® Supermoist Devils Food Cake Mix
  • 3/4 cup water
  • 1/4 cup vegetable oil
  • 3 (59g) Eggs
  • Platter, tray or foil-covered cardboard (about 35cm x 25cm)
  • 2 x 435g Betty Crocker® Vanilla Frosting
  • Black Food Colouring
  • Red Food Colouring
  • 10 soft red gel lollies
  • 6 soft yellow gel lollies
  • 4 cream-filled chocolate sandwhich biscuits
  • 2 pieces black licorice coil
1 hr 30 mins

Follow these basic steps

  1. Heat oven to 180°C (160°C fan-forced). Grease 3 (10cm x 20cm) loaf pans. Line bases with baking paper.
  2. Make cake mix according to pack directions. Divide batter evenly between pans. Bake 25-30 minutes or until cooked when tested. Cool 10 minutes then turn, rounded-side up, onto wire racks. Cool completely, about 1 hour.
  3. Spoon 1/2 cup frosting into small bowl; stir in enough black food colour to make grey. Place another 1/2 cup frosting in small resealable plastic bag; cut small tip off 1 bottom corner of bag. Spoon remaining frosting into large bowl; add red colour.
  4. Trim rounded tops from each cake. Cut cakes and arrange on platter as shown, joining pieces with thin layer of red frosting. Spread thin layer of red frosting over entire cake to seal in crumbs. Refrigerate or freeze cake 30 - 60 minutes.
  5. Frost area between cab and back of engine with grey frosting. Place remaining grey frosting in small resealable plastic bag; cut small tip off 1 bottom corner of bag. Frost remaining fire engine with red frosting. Pipe on windscreeen, windows and ladder with white frosting. Attach gumdrops for headlights, taillights and on top of engine. For wheels, pipe 1cm circles of grey frosting on centre of each cookie for hubcap and attach to cake. Attach licorice coils on sides of cake for hoses.
  6. Pipe grey frosting around wheels and bottom edge of engine. For bumpers, pipe 2 lines of grey frosting on front and back of engine.

* Australian Standard Measuring Cup used.
