Pink Castle Cake

Pink Castle Cake
Makes 1 Cake, Serves 30

You will need:

  • 3 x 600g pkt Betty Crocker™ Supermoist Vanilla Cake Mix
  • 3 x cups water
  • 1 x cup vegetable oil
  • 9 x (59g) Eggs
  • 3 x 453g Tubs Betty Crocker™ Vanilla Frosting
  • Red Food Colour
  • 1/3 cup caster sugar
  • White Platter or cardboard (46cm x 46cm), covered with aluminum foil
  • 5 x ice cream cones with pointed ends
  • 5 x coloured sweets
  • 28 x sugar cubes or marshmellows
  • 4 x pink round sweets
  • 5 x pink sugar wafer biscuits
  • 1 x tube white or pink writing gels

Follow these basic steps

  1. Preheat oven to 180◦C / 350◦ F (160◦C fan forced) Grease 3 x slab pans 16 x 26cm (base measurement) with cooking spray. Line with non-stick baking paper.
  2. Make cake mix according to pack directions. Divide batter between 3 slab pans. Bake for 35 minutes or until skewer inserted in the centre comes out clean. Cool for 10 minutes in pan, then gently remove from pan, remove paper and cool on wire rack.
  3. Spoon frosting into large bowl. Add drops of red food dye to create pink frosting. Add drops of red food dye to caster sugar to create pink sugar. Set aside.
  4. Using serrated knife, cut off domed top from each cake so they will be flat when stacked. Place one cake , cut side down on platter ; spread 1/2 cup frosting over top. Place second cake on top; do not frost.
  5. Cut third cake into quarters. Discard 2 quarters.( Yummy for the cook to eat while preparing) Spread a small amount of frosting on 1 quarter and place frosted side down in centre of stacked cakes. Repeat with another layer.
  6. Spread thin layer of frosting over entire cake to seal in crumbs.
  7. Frost cake with remaining frosting. Frost 1 cone and place upside-down in centre to create steeple. Frost remaining 4 cones with pink frosting; roll in pink sugar. Place 1 upside-down cone on each corner of the first cake layer. Top each cone with a coloured sweet.
  8. Place sugar cubes/marshmallows around edges of the first and second layers. Top each of the 4 corners with a pink round sweet. Attach 2 wafers on one side of first layer to create doors. Cut 2 additional wafers to desired size for windows; place each wafer on opposite sides of doors. Cut remaining wafer in half; place 1 half in centre of second layer to create another window. Pipe on window panes and doorknobs with white writing gels.
