Red Velvet Elf Cupcakes

Makes 12

You will need:

  • 1 x Betty Crocker® Chocolate Fudge Cake with Vanilla Frosting
  • 3/4 cup water
  • 1/3 cup vegetable oil
  • 3 (59g) eggs
  • 12 patty cases
  • 1 x tub Betty Crocker® Creamy Deluxe Vanilla Frosting
  • 1 tbls Red Food Colouring
  • 12 small red jube lollies, cut in half
  • Milk Chocolate Chips
  • 3 rolls, furit rolls
  • 3 dried apricots, halved
  • 1 tube red writing gel

Follow these basic steps

  1. Heat oven to 180°C (160°C fan-forced oven). Place paper patty case in each of the 12 regular-size muffin cups.
  2. In large bowl, beat cake mix, water, oil, eggs and red food color with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes. Divide batter evenly among muffin cups (about 2/3 full).
  3. Bake 18 to 23 minutes or until tops spring back when touched. Cool 10 minutes; remove from pan to cooling rack. Cool completely.
  4. Frost cupcakes with vanilla frosting; reserve 1 tablespoon frosting. Cut each apricot into 4 pieces; place 2 pieces on each side of cupcakes for ears. Cut each fruit roll into 4 triangles. Place one triangle on top of each cupcake, folding pointed end over to form hat. Attach one jube to pointed end of hat using reserved frosting. Use remaining jubes for nose and chocolate chips for eyes. Draw mouth with red icing gel
