- 1 540g Betty Crocker™ Vanilla Cake Mix
- 125 g butter, melted
- 800 g can apricots, well drained & sliced
- 200 g sour cream
- 1/3 cup caster sugar
- 2 eggs
- Ground cinnamon, for sprinkling

Preheat oven to 180°C (160°C fan forced).
Mix together vanilla cake mix & butter to form a soft dough. Press into lined 30cm x 20cm slice pan. Bake for 10-12 minutes.
Spread apricots over base. Whisk together sour cream, sugar and eggs. Pour over apricots and sprinkle with cinnamon. Bake for 25-30 minutes. Cool in tray. Cut into squares when cold.
