This Banana and Walnut Cinnamon Bread with warm butter on top is a great way to get rid of those very ripe bananas that you we’re going to throw out.

Ingredients

  • 500g Betty Crocker™ Cinnamon Crumble Muffin Mix
  • 125g butter melted
  • 2 extra large eggs
  • ½ cup (125ml) buttermilk
  • 1 cup mashed (very ripe) bananas (2 medium)
  • ½ cup chopped walnuts

Preheat oven to 180ᵒC (160ᵒC fan forced). Lightly grease a 23cm x 13cm x 7cm loaf pan with baking spray. Line the sides and base with baking paper.

Combine butter, eggs and buttermilk in a medium bowl. Add muffin mix, cinnamon crumble mix , walnuts and mashed banana (Do not eat batter as it contains raw eggs). Stir to combine and spoon into pan.

Bake for 50 -55 minutes or until skewer inserted in the centre comes out clean. Cool for 10 minutes in pan, and then gently remove from pan onto a wire rack to cool completely before slicing. Wrap tightly and store at room temp.
