Lime and Coconut Cake

Ingredients

  • Betty Crocker™ Vanilla Cake Mix
  • 3 extra large eggs
  • 125 ml milk
  • 80 g butter, melted or vegetable oil
  • 80 ml lime juice
  • 1 teaspoon grated lime peel
  • Tub Betty Crocker™ Vanilla Frosting
  • 1 cup shredded coconut

Preheat oven to 160°C (140°C fan forced). Grease a deep 20cm round cake pan with cooking spray. Line the base with baking paper.

Beat cake mix, eggs, milk ( or water) butter ( or vegetable oil), lime juice and peel in a large bowl with electric mixer on LOW speed for 30 seconds, then on MEDIUM speed for 2 minutes. (Do not eat batter as it contains raw eggs). Pour into pan.

Bake for 50 – 55 minutes or until skewer inserted in centre comes out clean. Cool for 10 minutes in pan, and then gently remove from pan onto a wire rack to cool completely. Cut cake horizontally into 3 layers. Place bottom layer, cut side up, on serving plate. Spread ½ cup frosting evenly over top of first layer of cake. Place second layer of cake carefully on bottom layer; spread evenly with ½ cup frosting. Top with remaining layer of cake.

Frost top and side of cake with remaining frosting. Sprinkle with coconut. Garnish cake with kiwifruit and strawberries.
