Betty's Easy Steps

  1. Preheat the oven to 180°C (160°C fan forced). Line 2 x 12-hole muffin pans with 24 paper cupcake cases.
  2. Make up the cake mix as directed on the box with the eggs, oil and water. Divide the mixture evenly between the cupcake cases.
  3. Bake both pans in the oven together for 18-22 minutes until the cupcakes are risen and just firm to the touch. Leave the cupcakes in the pans for 5 minutes, then transfer to a wire rack to cool completely (about 30 minutes).
  4. Spoon 50g of the vanilla frosting into a piping bag fitted with a large star nozzle and pipe a swirl of buttercream on top of one cupcake. Place the remaining frosting in a large bowl and beat in enough green colouring paste or gel to colour it bright green. Spoon into a large piping bag fitted with large star nozzle and pipe swirls onto another 21 cupcakes.
  5. Spread the chocolate frosting over the remaining 2 cupcakes. Assemble the cakes on a large board to resemble a Christmas tree shape with the 2 chocolate frosted cupcakes as the base and the vanilla frosted cupcake as the top of the tree.
  6. Decorate the green cupcakes as desired with the assortment of Christmas lollies, chocolates or sugar cake decorations. Place the large white chocolate star on the vanilla frosted cupcake.

Betty's Tips

  • You can bake and freeze the un-frosted cupcakes for up to one month. Defrost for 2-3 hours at room temperature. The cupcakes can be frosted a day before serving but only add the decorations on the day of serving.
  • This is a great fun recipe to keep kids occupied in the run up to the big day. Let them help with the decoration – and choose their own festive lollies to top each cupcake.
  • Spray the chocolates and white chocolate star with edible gold spray before adding to the cupcakes for an extra-special finish.
